Description

A delicious and nutritious breakfast option that combines the flavors of peanut butter and banana in a convenient overnight oats recipe.

Ingredients

Scale
  • 1 cup rolled oats
  • 2 cups almond milk (or any milk of choice)
  • 2 tablespoons peanut butter
  • 1 ripe banana, sliced
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon

Instructions

  1. In a mixing bowl, combine rolled oats, almond milk, peanut butter, honey or maple syrup, vanilla extract, and cinnamon.
  2. Stir well until all ingredients are fully combined.
  3. Fold in the sliced banana.
  4. Divide the mixture into jars or containers with lids.
  5. Refrigerate overnight (or for at least 4 hours) to allow the oats to soak up the liquid.
  6. In the morning, give the oats a good stir and add additional banana slices or toppings if desired.

Notes

  • For a creamier texture, use Greek yogurt in place of some of the almond milk.
  • Feel free to add toppings like nuts, seeds, or berries before serving.
  • This recipe can be made in bulk for meal prep throughout the week.
